The D.O.C. (Controlled Designation of Origin) identifies wines that are made following production rules laid down by the law. The rules establish the exact geographical area limits of the grape, the characteristics of the vineyard soil, the techniques of vine cultivation, the vines that can be used and the relative percentages, the maximum yield of grape per hectare, the yiled of grape in the wine, the acidity, the dry extract.It also defines the minimum alcohol level, the possibility and regulation of wine production and bottling outside the area of origin, the tecnique and time of aging, the practises that can or should be applied to the wine.
