DOCG (Denominazione di Origine Controllata e Garantita), identifies wines that have undergone, prior to marketing, an organoleptic examination carried out by special commissions. These are convened by the relevant Chambers of Commerce to ascertain the particular merit of the wines and their compliance with the conditions and requirements established in the respective production specifications. Once this examination has been passed, Ministry of Agriculture and Forestry stamps are issued to the producer, initialed and numbered, corresponding to the quantity of the batch of wine under examination, which must be placed on each bottle in such a way that they are torn at the time of uncorking.
